Tricolor octopus
INGREDIENTS
Ingredients for 10 portions:
− 500 g octopus;
− 250 g Ginos “Antipasto tricolore” fava beans (COD. 01028),
− Chives, lemon peel, sweet paprika, parsley, extra virgin olive oil as required.
PREPARATION
Grab a medium-sized octopus, wash it and boil it in steaming salted water for about 1h and 10 min.
Once cooked, pull the octopus out and allow it to cool at room-temperature.
Afterwards, cut it and portion it with 250 gr of “Stafava” fava beans.
Season it with extra virgin olive oil, grated lemon peel, sweet paprika, parsley, chives and serve it at room-temperature.
